Following a sold out Group Therapy Session with the Mood Therapist at Cama ATK last month, I’ll be doing another night of cocktails at The Republic on Thursday 21st April 2016 starting at 6.30pm. It’ll be exactly the same menu as at Cama, for all those who missed out on tickets for that and for anyone who just want to do the whole thing all over again! Remember, it’s tickets only and limited places. They go fast so don’t delay if you would like to come. Details below.
As four of the five drinks were new on the menu, there are plenty of people in Hanoi who have yet to try them so who am I to deprive them of their cocktail rights? Right?
Cocktails at The Republic
Kicking off the line up of cocktails at The Republic will be the Rum and Smoke, a re-imagining of the standard rum and coke, featuring an oak-smoked play on ‘Coke‘, or as I like to call it, Uncle Hola. Made in-house from a variety of organic, food grade steam-distilled essential oils, including some uniquely Vietnamese flavours such as pomelo flower and green coriander seed (from Laurent Severac), it has no high fructose corn syrup, colouring or preservatives. After making up a base syrup with pure cane sugar, it’s smoked with oak chips to bring a whole new complexity to the finished drink. It’s a unique cocktail that you’ll have never tried the likes of before – unless you were at Cama a couple of weeks ago…
Next up is the Vietnamese Basil Daiquiri. It’s not new but it’s certainly a modern classic. Made from a recipe by Dave Arnold of New York’s Booker and Dax bar, it’s a refreshingly herby punch in the mouth. It’s secret is using liquid nitrogen to nitro-muddle the basil and stop it oxidising before making a classic daiquiri with Flor de Cana Extra Dry. Awesome.
Third on the hit list is His Nib’s Grand Belvedere, a cocktail I created for a charity event in support of The Library Project at the Grand Hyatt Saigon. Working with Marou Chocolate and Moet Hennessy resulted in this Mood Therapist original made with Belvedere vodka pressure-infused with Marou Ben Tre cacao nibs, Grand Marnier, cold brew Marou and centrifuge-clarified passion fruit.
Next up is the Matcha Made in Heaven, a twenty first century twist on the whisky sour. Dewar’s 12 year old is shaken with lime juice and simple syrup and then topped with a matcha vanilla foam through which it is drunk, bringing all it’s aroma and flavour.
Rounding off the evening will be a Chipotle and Rye Old Fashioned. Rittenhouse Rye, my own house made aromatic bitters and a chipotle and Phu Quoc pepper syrup, made low and slow in a sous vide set up. Spicy, aromatic and comforting.
The Republic will also be providing a selection of complimentary canapés for the first hour so arrive early!

Of course, the full menu is also available all night, for those who need something a little more substantial.
Seats are strictly limited and the only way to reserve a spot for cocktails at The Republic is through the pre-purchase of a ticket priced at 1,000,000VND, which entitles you to the full course of five cocktails.
Additional drinks may be purchased separately, depending on availability. If you’re lucky there’ll be some different drinks to choose from, but you’ll only find out if you’re there…
