Are you ready for the Liquid Laboratory?! Apologies, gentle readers, for the lack of updates. It’s been a little crazy around here…but I’m back and I’m busy!

I had a great evening on September 9 with the team at the InterContinental Hanoi Westlake. It was the first in a series of Liquid Laboratory evenings at the Sunset Bar. Each is a themed evening featuring a selection of modernist cocktails, paired with a delicious food offering crafted by Executive Chef, Jeremy Lasserre.

Hanoi's Mood Therapist Modernist Cocktails

Following a sold out Group Therapy Session with the Mood Therapist at Cama ATK last month, I’ll be doing another night of cocktails at The Republic on Thursday 21st April 2016 starting at 6.30pm. It’ll be exactly the same menu as at Cama, for all those who missed out on tickets for that and for anyone who just want to do the whole thing all over again! Remember, it’s tickets only and limited places. They go fast so don’t delay if you would like to come. Details below.

I’ve been using sous vide in cocktails ever since i got my shiny new Nomiku immersion circulator fresh from their successful Kickstarter campaign in 2012. Over the years I have found additional uses for it in addition to what struck me as obvious – the slow cooking of syrups to create a greater depth of flavour. After I created the Marouni in 2015, the good folk at Nomiku saw it on my Instagram account and contacted me to see if I would write a guest blog for them on sous vide in cocktails.

The Grand Bean to Bubble - Another Modernist cocktail by Hanoi's Mood Therapist, Rich McDonough

The Grand Bean-to-Bubble is a new Marou Chocolate cocktail with a hint of Grand Marnier, topped off with sparkling wine.

It was created for a charity fundraiser in support of The Library Project – an organisation that provides access to books for kids in rural Vietnam. It’s the result of a collaboration between the Mood Therapist, Marou and Moet Hennessy and debuted at an event at the Park Hyatt Saigon organised by Rice Creative.

The lavender gin and tonic came out of my first foray into the world of home made tonic water and was the most successful of the initial four variants I produced. Force carbonated, it is extremely fizzy, in a way a regular G&T never is because the gin gets carbonated as well as the tonic and you can really amp up the pressure if you so wish. Recently I heard about a British “Molecular Mixologist” who offers futuristic cocktail in luxury hotel restaurants and private parties for executives.

What is mixologist? Unlike bartender, a mixologist prepares any house-made syrups, tinctures, or other ingredients, therefore he is also called “bar chef”. Molecular Mixologist mix cocktail ingredients on the molecular level using the scientific techniques and tools, such as centrifuge and nitrous oxide, liquid nitrogen etc…

Luckily I had a chance to taste the futuristic cocktail of Mr. Richard McDonough. Here are some “Molecular” cocktails that knocked on the door of my heart! (for more info: www.moodtherapist.com)
